W4DW- Beefy Taco Bake

What's for Dinner Wednesday?  An easy ground beef recipe that will feed most starving, growing boys.  Things are crazy busy here on the farm in Kansas.  After a month of rain every week, we have been given a week of no rain.  There is hay to be baled, soybeans to plant and wheat harvest to get ready for.  I will try to do a post later this week about some of it, what would you like to know more about?

The boys also have me running.  We have gotten help with their sheep and went on the State Geology Trip.  Later this week, one will go to a judging contest and a camp about lambs.  Life is crazy busy and I am glad that I have a cousin that has come to help us out on the farm.  He started this week and if he can survive this week, he can survive anything.

Beefy Taco Bake
2 pounds ground beef
1½ cups chopped onion
1 (15 oz) can tomato sauce
1 (15 oz) can kidney or chili beans
2 teaspoons chili powder
 1½ teaspoons salt
½ teaspoon pepper
12 corn taco shells
2 cups cheese
Shredded lettuce
Chopped tomato

In a 10 inch skillet over medium high heat, cook ground beef and onions until beef is browned and onions are tender, about 10 minutes. 

Stir in tomato sauce, beans and spices.

Break taco shells and arrange on sides and bottom on 13x9 inch pan.

Spoon meat mixture evenly over taco shells; sprinkle with cheese.

Bake at 350*F oven for 15-20 minutes until hot.

Top with lettuce and tomatoes.
