W4DW-Heavenly Frosted Banana Bars

I almost forgot today was Wednesday and you would like to know What's For Dinner Wednesday?!  I have been busy getting Flat Aggie Reports to teachers.  If you wonder what it's like on a pig farm, there are some awesome reports from farms in Iowa, Indiana, Minnesota and Kansas.  These farmers aren't too old or too cool to play with paper dolls and made this month a fun one to read through.  Be sure to share these with your kids or grandkids, so they can see where their bacon comes from. 

I do a great job of buying fresh fruits and vegetables for my kids to eat, but sometimes they don't always eat them all. Most of my friends take over ripe bananas and make banana bread, but our family prefers these frosted banana bars.  The disappear almost as quickly as I make them.



Frosted Banana Bars
½ cup butter, softened
2 cups sugar
3 eggs
1 ½ cups ripe bananas, mashed about 2 large bananas
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda

Frosting:
½ cup butter, softened
1 package (8 oz) cream cheese softened
4 cups powdered sugar
2 teaspoons vanilla

Preheat oven to 350 degrees.  In a mixing bowl, cream butter and sugar.  Beat in eggs, banana, and vanilla.  Add flour and baking soda  and mix well.  Pour into a greased jelly roll pan (15x10x1).  Bake for 25 minutes or until a toothpick inserted in the center comes out clean.  Cool. 
For frosting:
In a mixing bowl, cream butter and cream cheese.  Gradually add powdered sugar and vanilla; beat well.  Spread frosting over cool bars.
