Easy 5 Minute Microwave Fudge

Things have been incredibly busy here on the farm.  We finished planting corn on Sunday, vaccinated calves, moved some cows to new pastures, burned pastures, fertilized the wheat and it's only Wednesday!

Busy times at work call for quick and easy recipes like those in my Farm Wife Meal Planner.  This was a family favorite that we had often when I was a child until it was determined that I was allergic to chocolate (but that is a story for another day).  We often had popcorn and fudge together as a snack while watching TV on Friday nights.

Easy 5 Minute Microwave Fudge

1 pound powdered sugar
1/2 cup cocoa
1/4 cup milk
1 stick butter or margarine
1 t. vanilla
1/2 cup chopped nuts (optional)

Blend powdered sugar and cocoa in mixing bowl suitable for the microwave.  Add milk and butter DO NOT mix.  Microwave for 2 minutes.  Stir to mix the ingredients then add vanilla and nuts.  Stir until blended.  Pour into buttered 8x8 inch pan and place in freezer for 20 minutes or refrigerator for 1 hour and you have fudge.
